Hey, I just checked out http://www.japan-guide.com/bus/fuji.html.

And I would like to confirm if the buses really do travel there in the winter.

They usually do

Matthias, according to this April 4, 2014 archived page of the same webpage you sent (https://web.archive.org/web/20140404210503/http://www.japan-guide.com/bus/fuji.html), last winter, except when the road was closed due to snow, the climbing bus from Kawaguchiko Station to the Fuji Subaru Line 5th Station operated daily until December 1, 2013, December 29, 2013 to January 3, 2014, and March 15 to April 6, 2014.

A new timetable for this winter will likely be posted sometime after the end of the current climbing season.
